Oh, my...where to begin?!
I am particularly fond of Cowboy Bebop, because of the wonderful mix of grittiness and downright silliness. The juxaposition is often very entertaining....

hmmn, i've always been fond of DBZ the show that is not afraid of long story arcs, or long fights.
i've only seen the first 5 episodes of cowboy bebop on DVD and enjoyed them. Hmmn some i've only seen through toonami, like
Big O (i really enjoyed) ,Outlaw Star i liked too, a variety of Gundum Things, which i kind of liked. Voltron, hmmn , i guess i could go on

Okay, I'm back to continue my long list o'anime favorites. *grins* I know it took me a little bit, but for a list this long, you gotta eat well and then get a good night's sleep.
So, I've already listed Cowboy Bebop, which you should watch more of din. It only gets better. In fact, if you only watch one more episode of that, make sure it is "Ballad of Fallen Angels". I can't recall if that is one of the first five or not. I think it is a little father into the tale, though. If you aren't familiar with the series, it follows the adventures of Spike Spiegle's band o' bounty hunters. A lot of people wonder about the show's name, too. Cowboy=bounty hunter and Bebop is the name of Spike's ship. Hence, Cowboy Bebop.
I also watch Escaflowne. Such a good story! It's all about a girl who holds the last bit of power of the Atlanteans. (No, it doesn't take place underwater.) *grins* Escaflowne explains why the Atlanteans disappeared. But, anyway, the story is about Fate and those who want to control it. This is another good anime just because there is no real "bad guy" here. Even though there is a definite set of antagonists, you can sympathize with them all. They have good intentions, they're just going about things the wrong way...
Dragonball and Dragonball Z are highly entertaining just because they don't take themselves all that seriously. For a long time, I kind of scoffed at people who watch it. "All they ever do is fight. There's no real story there." Then, one day, I actually watched an episode. Well, I must admit that I made a mistake. Both shows are hilarious. The very fact that the writers make fun of their own characters tickles me. The one show that always sticks with me from Dragonball is where Krellin and Goku are fighting in a tournament (aren't they always?) and Krellin comes up against an opponent who has been taking out people right and left by using his ungodly stench. Poor Krellin is having a hard time of it until Goku climbs up near the ring and yells, "Hey, Krellin! Just close your eyes and you won't smell him. You don't have a nose, remember?" (And, Krellin is, indeed, drawn without a nose.)
Record of the Lodoss Wars. I think this is a staple for anyone who is both an anime and fantasy fan. It's a fantastic, epic fantasy of good vs. evil. And, even then, you find out that at least one of the people you thought was evil is actually an honorable man who is doing nothing more than trying to protect his people. (In fact, Lord Ashram is one of the central, legendary figures in another anime that spun off of RoLW, The Legend of Crysania, which tells of what happened to Ashram when he left Lodoss in the OVA series.)
Project A-ko. Watch it just for Beiko, lavender haired, evil genius schoolgirl who builds mecha in her spare time to crush Aiko and gain the affection of the annoyingly cute Ceiko. This was one of the first anime I ever watched (aside from the Saturday AM stuff like Thundercats, Voltron, etc.) and is part of the reason I fell in love with the genre. I rolled with laughter the entire time I watched it. The tape I have is now fuzzy and about to die on me, I've watched it so much.
*wipes the sweat from her brow from all this writing and grins* Okay, I need to get to work soon, so I'm going to cut out on the synopsis for a little while.
I also watch Yu-Yu Hakusho, Slayers, Trigun, Gundam Wing, Ghost in the Shell, I've started watching Rurouni Kenshin, I've seen bits and pieces of Bubblegum Crisis, Blue Seed and Patlabor, my friend has loaned me X and I still need to watch it....

Ok, here goes:
-Escaflowne. I agree with Ari on this wholeheartedly.
-Lodoss. A great series.
-Neon Genesis Evenagelion. So trippy at the end. An awesome series if you like mindbenders and giant mechs. (well kinda... watch it and find out).
-Cowboy Bebop. An all around great series with interesting characters and more than a few laugh out loud moments.
-Samurai X: Trust and Betrayal. The OAV of Rurouni Kenshin. I haven't yet watched the Actual series, but these two tapes were awesome.
-Akira. Simply a staple.
-Vampire Hunter D. Another staple.
-Princess Mononoke. A great movie with a great story. Rent it. Now.
-Ninja Scroll. Hey look! Boobies!
This list could really go on and on. Akira and Vampire Hunter D hold a special place for me, as they were the first animes I really watched. I've also seen Trigun, and the series was really good, but I didn't care for the ending, I guess. *shrugs* 3x3 Eyes, Bastard!, Gundam Wing, DB and DBZ,.... *sighs* I better quit before my fingers get blisters and my keyboard falls apart....

D'oh! Thanks for catching my mistake on that one, Haru. *laughs* And, I'd never forget Jet! He's way too cute in that apron and the sunglasses he wears when he's cookin' to forget....
I'm glad you brought up Princess Mononoke. That's a beautifully done anime. The artwork is simply gorgeous and the story itself is almost fairy-tale like in that it deals with the gradual replacement of magic in the world by technology.
I know that I am going to become an anime pariah for asking this....but can you explain Akira to me? I've watched it over and over and over and it just doesn't make sense to me. What's with the giant teddy bears crying milk?
The sequel to Vampire Hunter D, Bloodlust, is also excellent.

Ranma 1/2: The ultimate in transgender and transpecies anime.
Berserk: Much with the dark fantasy.

I do so know what I'm talking about, Haru. One can be cute and still be kick ass...and, let me tell ya, for a gun-totin', bounty huntin', cyborg ex-cop, Jet is cute. So, there.
*chuckles* Well, Ranma can be a bit cutesy. But, like all things, I enjoy it when I'm in the mood forit. It really is quite funny. Actually, some of the "co-stars" are more entertaining than the main characters. Personally, I'm very fond of Nabiki - manipulative, gold-digging, conniving, self-centered...so very non-cutsey.
I found a beautiful anime music video last night. It's called "Innocence" and uses the song "Innocence" by Enigma and clips from Escaflowne. Basically, the video shows how all of the characters are innocent in their own way, reflecting on the joys and tragedies that made them what they are. It almost brought tears to my eyes when they showed Folken rescuing the feline twins from the mob that killed their parents and then sitting with them years later as they died in his arms. I'll have to search around and see if I can find the link to it here at work. If I can't though, I know the site is still in my browser history at home.
